250g goat liver
l Let's start by preparing our vegetables, beginning with a bunch of coriander and an onion. First, peel the onion and discard the outer layers. Then, chop the onion into small, uniform pieces. Next, thoroughly wash the bunch of coriander under running water to remove any dirt or impurities. After washing, shake off the excess water and finely chop both the leaves and stems. Set the chopped coriander aside. With the onion peeled and chopped, and the coriander cleaned and finely chopped, we're ready to move on to the next step in our recipe.
l Now, let's prepare the carrots. Start by washing the carrots thoroughly under running water to remove any dirt. You can use a vegetable brush to ensure they are clean. Next, decide whether you want to use a grater or a peeler.
Using a Peeler:
Peel the outer skin of the carrots using a vegetable peeler. After peeling, cut off the ends of the carrots. Slice the carrots into thin rounds or small cubes, depending on your preference.
Using a Grater:
If you prefer grated carrots, peel the outer skin of the carrots first. Once peeled, use a grater to grate the carrots into fine shreds. With the carrots prepared, we now have all our vegetables ready for cooking.
l It's finally cooking time. Fetch a pot and start with the goat liver. Place the liver in the pot, add enough water to cover it, and bring it to a boil. Let it cook until the liver is tender. This initial boiling will help remove impurities and ensure the liver is properly cooked before we add it to our prepared vegetables.
Prepare the Goat Liver:
Place the goat liver in a pot and cover it with water. Bring it to a boil and let it cook for about 15 to 30 minutes until the liver is tender. Once cooked, drain the goat liver and set it aside.
Make the Stir Fry Sauce:
Using the same pot, add a tablespoon of cooking oil and heat over medium heat. Add the chopped onions and sauté until they become translucent and fragrant. Add the grated carrots to the pot. Cook for a few minutes until the carrots start to soften and change color. Add thawed and chopped tomatoes (or tomato paste) and stir continuously. Cook until the mixture thickens and the raw tomato smell dissipates.
Add Spices:
Sprinkle in a pinch of salt, ground black pepper, and ground coriander. Stir well to combine. Add a single beef bouillon cube to the mix. Stir to ensure it dissolves and is evenly distributed. Cover the pot and let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
Combine and Finalize:
After 10 minutes, uncover the pot and add the boiled goat liver to the sauce. Stir in the chopped coriander, mixing well to ensure the liver is coated with the sauce. Allow the mixture to come to a boil, then reduce the heat and let it simmer for an additional 2 minutes to let the flavors blend.
Serving:
